Today, we had some home-made Fish and Chips (beer batter) for lunch! Yes, beer batter. Use a good beer like Kilkenny for better taste. I think we can soon beat Fish & Co, Mahanttan, Long John Silvers!

Mix the flour, cornstarch, baking power and salt. Whisk until well-mixed.

Mix 2 eggs with beer of choice. Pour it into the flour mixture above. Whisk until there’s no more lumps. Leave it aside for 15mins in the fridge. The batter should be thin. A thick batter will make the crust chewy.

Dry the fish with some kitchen towel. This is to make the fish more crispy.

Sprinkle some flour over the fish and dump it into the batter.

Fry till golden brown.

Serve with some French fries, we highly recommend the spiced fries from Cavendish, restaurant style French fries. We also fried some crab sticks with the leftover batter. They make really good complements!

Squeeze some lemon over the fish. Malt Vinegar would be even better.

Went to the airport to send 3(+1) of my friends off to USA. All of them going for the Work and Travel USA program. Basically, it’s providing cheap labour for Cedar Point Amusement Park and traveling around USA.


Zhi Hao, Kenneth, Benedict and her were on the same flight. Some will be away for 3 months, some 9 months. I felt that it’s the beginning of our life stages where we good friends we will have to take a separate path, maybe in pursue of career, fame, money or love, and hope that the paths will finally meet again sometime in the future.
Picked up a Mother’s Day gift before heading down to my campus to settle some issues for my SFO trip. Great meeting, Mac club’s President, I must say, is talented and friendly (for an ah-tiong).
90 mins later I was on the train again, heading towards East Coast Park. Yesterday’s the first day where my iPod actually ran flat.
So we met at Scruffy Murphy’s Irish Pub. IRISH! KILLKENNY! HAPPY HOUR! 3 PINTS! shiok. Everyone was sober and controlled until one adventurous person, Miss Low, decided that we should open a bottle of Absolut. All hell broke loose from then on… Anyway it was a great night! lotsa fun!

I seldom watch American Idols, but I’m glad I caught the special charity episode: Idols Give Back. One of the highlights of the show was a duet by Celine Dion and Elvis Presley. After watching that duet, I’ve finally realized why Elvis was so popular then and even now. His charismatic stage presence, his mesmerizing and passionate voice, his looks.. I’ve officially became a fan of him.
The song: If I can Dream, I could listen to it over and over again, and it gets better each time!
On another note, after watching charity shows like BBC’s Top Gear of The Pops: Comic Relief Special, done for Comic Relief and American Idols: Idols Give Back, done for various causes in Africa, I think Singapore’s charity shows really gotta buck up. In Top Gear of The Pops: Comic Relief Special, like the name suggest, it uses comedy and laughter to get serious messages across, while making sure that everyone who gets involved can have fun at the same time. For Amercian Idols, they use music, the universal language, to spread the message.
We should learn from the foreigners, no need for dangerous stunts, actors and actresses doing (copied) acts.
Having said that, enjoy the video clip!
